Sounds good, I mean you can use literally anything to host servers.
It’s (debian) a great choice especially when you plan to only use docker though, for sure, as you won’t really run into those old package issues (+ if u like to upgrade and feel very safe doing so each time without looking at news first, might be survivorship bias, but debian has never broken for me through multiple major version upgrades and I’ve been blindly upgrading each time).

Any backup location is secure as long as you encrypt your data securely before you back it up there.
For something as important as a backup that you don’t want to lose, I’d stick with something tried and true like Backblaze B2.
Backblaze is also very cheap for what it is (a great storage solution). You can pay monthly or use more of the regular pay as you go model.
Monthly and pay as you go have ups and downs, but the benefit of pay as you go for me is the ridiculously cheap deal (if you download your backups a lot it may be less so, but I don’t so it works out very cheap for me).
You have arch and debian experience, so I think Debian would be great for your server.
You don’t want rolling releases (eg arch) on your server really because you don’t want stuff to break. Debian will be a rock solid choice.
I don’t feel confident with the hardware questions because I have never streamed higher than 1080p, but I would imagine it’d be easy for most systems. A used computer would probably be my choice, mostly for upgradeability, but that’d use more power than a mini-pc for example.
A normal used tower pc could be good if you plan on getting a cheap GPU down the line for transcoding (maybe you’re out and don’t want to use as much data, etc). CPUs can probably do a lot for one user though.

Sounds nice to have it separate, but it’s not hard to reinstall services or even your whole os (as long as you are partitioned correctly) while your data is on the same machine/disk.
Two machines does sound overkill for Jellyfin (and 99.99% of self hosters).
Mozilla VPN is just Mullvad, so you are on a very good vpn service.
As long as you are happy, I don’t see why you should swap.
(Going to mullvad directly could be slightly beneficial if you want a generated account that has no direct metadata to link to you, using a card to pay would negate that benefit, but theres other options… in the end you are using a good service already)

You are correct, encrypted mail providers should encrypt on-device, before sending the mail, but there isn’t a solution to the unencrypted mail you could potentially recieve being intercepted.
Agree, I use it myself. My only gripe is that it seems pretty slow, not sure if thats the deduplication part or what, haven’t bothered looking into it because i run the backup after im in bed so not a big deal.
If you are gonna run the backups during daytime might be a problem.

In a data sense specifically, I believe privacy refers to your data being hidden from unwanted eyes (aka you have control over who can see your data).

It is easier to blend in though if the vpn doesn’t log (and before logging is added by feds if possible) or if the person tracking you is not a government and doesnt have that control or is just the service you use, etc.
As long as you can generate a wireguard config that works, for example, on your desktop/main pc with wireguard directly, then Gluetun should have no issue (as far as im aware).
Gluetun specific provider support is usually just there to get setup faster (I think so it can automatically get configs for certain countries, etc).
VPNs and Tor are used for different purposes (sort of).
And common tasks like downloading big-ish files or streaming video should not be done on Tor (it’s possible, but I believe it is discouraged), but can be done easily over a VPN.
I’m not sure about your statement, but using a very unknown vpn could lead to possibly tracking you because theres less of a crowd to blend in with.
Assuming your statement is correct (idk if it is), then there’s a middleground i guess.
They are conceptually quite different.
People use both the terms interchangeably, but they are not the same thing.
Voting ballots are anonymous because you didn’t write you name on them (and they can’t be linked back to you hopefully), but they are not private because you have no control over how the data is used (once you submit a balot you have zero control over what happens to it next).
Usually fine for media only like Jellyfin, since you write every now and then new content, then only read from it for longer periods of time.
I probably wouldn’t go for a SMR drive anyways just because drives can last a long while and who knows what i’ll want to do with it in the future.
(If you use RAID, this advice doesn’t matter, but if you don’t run raid like me and only use it for media like in the example, I’d imagine it’d be fine)
